Haliburton Highlands Brewing
Like a lot of stories this one began with a dream, a set of enshrined values, and a whole lot of dedication. A vision for a sustainable addition and libacious tribute to these beautiful highlands finally came true with the opening of Haliburton Highlands Brewing back in 2014, and since then they’ve moved to an even bigger and better location on the serene Abbey Gardens property.
Abbey Gardens is an inspired community project that encourages visitors to think more sustainably about land, food, energy and economy. The brewery is proud to partner and build relationships with local growers, producers, artisans and suppliers.
Haliburton Highlands Brewing is pleased to be part of the robust local food scene in beautiful Haliburton Highlands, Ontario. Hand crafted, all-natural ales brewed in the heart of the Haliburton Highlands! The beers you can taste in the taproom – or take it away. Sometimes the brewery is also hosting events.
Gruitbeers
Not continually but in very special limited editions they brewed several gruitbeers over the last years starting 2014 - so our information from brewmaster Michael Schiedel-Webb.
To celebrate International Gruitday variations of "Garden Gate Gruit" have been brewed with different ingredients like yarrow, bog myrtle and labrador tea (wild rosemary). This “gruit” mixture was selected to include plants which will grow in the Haliburton region, allowing to transition to ingredients grown on-site. The beer also contains honey.
In 2019 there was a special edition called "Dubbel or Nothin." It was a light-bodied, dark Belgian dubbel gruit bittered with rosemary, juniper berries, and sweet gale with notes of chocolate, vanilla and dried fruit with herbal undertones.
In addition to this Haliburton also brews a spruce beer - according to the definition on www.gruitday.beer also a gruitbeer.
